I had no idea what I was going to make for supper yesterday.  I got some groceries and decided whatever I fixed would be based on fish, so I bought 3 haddock fillets and some fresh green beans.

My intention was to bake the fillets with some jerk seasoning, but as I was getting that ready I noticed a bottle of salsa (medium) in the pantry.  This gave me new inspiration.

I dumped the bottle of salsa on the bottom of the baking dish, laid the fillets on top of the salsa and then sprinkled a generous amount of jerk seasoning on top.  Baked it in a 350F oven until done!  Served with mashed potatoes and steamed green beans.  Delicious!

Notes: The jerk seasoning was old so not very powerful, however the combo was still excellent.  The salsa cooked down some and made a nice “sauce” and either the fish, the seasoning or both changed the flavour of the bottled salsa so it didn’t taste like bottled salsa!

I must try to remember to take pictures if I’m going to post notes about a meal.
